Kachori another wonderful snack to munch on it.

Kachori is a snack eaten after samosa in india .there are many types of kachori like raj kachori aloo kachori pyaaz ki kachori and all but we will look out for something good option to munch on it.kahcori is a snack easily available at the most places like on small hotels,bikaner and all.                          (Note :enjoy my blog in many language check it out on the left side of a blog ) .             So lets move towards the footsteps of making kachori.                                                          preparation time :1-2 hour                                  cook time :40-45 minutes.                                   Cuisine :north indian.                                           Type: vegetarian.                                                  Prefered as :snack.                                              So lets see the ingredients for our goal means "kachori".                                                    'Ingredients':  we are making "khasta kachori". 2 cups refined flour,  1/4 cup of ghee (Butter), salt (as needed), cold water (for mix purpose),  oil  .                                        For  the filing :3/4 cup of black gram(husked) we will soak black gram as per our need, 2 tbsp of oil,1-2 tsp of cumin seeds(jeera),1/8 cup Hing (asafoetida), 3/4 tsp of garam masala,   3/4 tsp chili powder,  2-3 tbsp fennel seeds(saunf  powdered),2 tbsp coriander powder,  salt (as needed),  1 1/2 tbsp of mango powder.                                       
Footsteps to follow :1) grind the lentils in grinder it must be coarsed .                                2) Heat 2 tbsp of oil in a pan  along with that add jeera (cumin seeds) and hing (asafoetida) in that pan.                                        3) when they  begin to splutter /bouncing /heated   add lentils and remaining ingredients which are for filing used.              4)   let them fry just saute them for some time.                                                                          5)not sticking to pan is the sign that it's done.                                                                        6) turn off the gas and let the mixture keep aside to cool down.                                               now we are going to prepare dough.                7) mix the flour and salt well.                               8)  Add ghee into the flour. Ghee will add softness into the flour .                                        9) make it a crumbled mixture with the help of fingers.                                                                10)Add water into it  for making a steffish dough.and cover them aside for 15-20 minutes.                                                          
11)make a marble size balls not too large or nor too small with that dough .                           12)cover them with cloth properly. (Untill they filled)                   13)Make about 15-20 smooth balls as general size of kachori.              14)   take the rolled dough we will make centre thicker .                                                        15) dampen the edges and add the filing in the center.                                                                16)  press together edges to seal properly.         17)  press gently in the center  flatten a little to make a round kachori.                                      18)  our kachori is ready to fry .take a pan add a oil as per need let the oil heated.            19)then pour kachori one by one.                      20)flip the kachori with gently. Golden colour is sign that our kachori is ready .           Let's serve the kachori with some chutney or sauce.
