Chana masala flavourful and tasty stuff

 Welcome to all yes today we are going to enjoy some spicy stuff.yes I am talking about "Chana masala".

                                                                                                                                                                 Preparation time:15-20 minutes.                     Cooking time: 30-35 minutes.                           Cuisine: Punjabi.                                                  Type: Vegetarian.                                                   Prefered as: Lunch, Dinner.                                                                                                                                                                                               List of Ingredients: 1 Cup chickpeas (chana),Water( As needed), 1/2 Tbsp Baking soda, salt ( As Needed), 1/2 Cup corinader leaves, 1/2 Cup cumin ( Jeera), 1 Tbsp pepper, 1 Tbsp clove, 1 inch cinnamon( Dalchini), 1 Tbsp Fennel seeds( Saunf), 4-5 dried red chili , 1 Tbsp Turmeric ( Haldi), 1 Tbsp Ghee( Butter), 1 Bay leaf( Tezpatta), 1 onion ( Finely Chopped), 1 chili ( Slit), 1 Tbsp ginger garlic paste( Adrak lehsun paste), 1 Cup tomato puree,1 Tbsp amchur powder,1 Tbsp kasuri methi.

                                                                                                                                                                 Step by step Guide to Follow:.                           1) Take a empty bowl add enough chick pea add ample of water and keep them Soaked for 8-9 hours .                                             2) After soaking time is over take a pressure cooker add soaked chickpeas in a pressure cooker.                                                       3)after that  add 1/2 Tbsp Baking soda and 1 Tbsp of salt along with 3 cups of water .                                                                      4) cover the lid let them Chana will be cooked or untill 5-6 whistles of cooker.              5) Take a pan add 1/2 Cup Coriander Leaves along with 1/2 Cup cumin, 1 Tbsp pepper,1 Tbsp clove,1 Tbsp fennel seeds along with 1 inch of cinnamon in a pan.              6) Roast them well on a low flame for just get aroma from spices .                                         7) now add dry chillies just to make chili crunchy.                               
 8) Turn off the gas let them cool down for few time . transfer these into a mixer.                       9) along with add 1 Tbsp amchur powder,1 Tbsp Turmeric,1 Tbsp kasuri methi into the mixer.                                                      10) we want fine powder dont add water because there is no need to add water.                                                                                 11) chole masala powder is ready stored for longer shelf life.                                           12) Take a large kadhai add 1 Tbsp Ghee,1 Tbsp cumin, 1 pod cardamom, 1 Bay leaf Untill the turn aromatic  let then cook on a medium heat .                                                            13) Add 1 onion,1 chili, 1 Tbsp ginger garlic paste Saute them well onions will turn down golden brown.                                          14) Now add 1 Tbsp. Prepared chole masala along with pinch of salt saute them well on a medium heat.                                            15) Now add 1 Cup tomato purre mix them well and again.                                                           16) saute them well untill oil start separating   from added stuff.                                            17)  Add pressure cooked Chana and mix   it well cover the lid simmered up for 5-10 minutes served and enjoy.
