Masala dosa tasty and healthy for tummy too

Looking for something light weight stuff and still wandering here and there then your search is end here.i will tell I have one cool option did u know .I will explain the dish called masala dosa .it's light weight in case of digestion and it will also fulfill your tummy.basically it's a fermented dish it make super awesome , tasty and wonderful to eat.        Preparation time:  10-20 minutes.                  Cook time:   1-1 1/2 hour  .                                     Cuisine:south indian                                       Fermentation:10-15 minutes.                            Prefered as: Breakfast.                                       Type: vegetarian. Taste better with:sambhar and peanut white chutney.             

So this is how masala dosa look like.              So lets move toward the process of masala dosa are u excited yes u should be excited .first of all we will take out the ingredients required.                                                                 Ingredients:1/2 cup udid dal(skinned black gram),3 tbsps chana dal(bengal gram) if chana dal not available then u can also use 2 tbsp chana dal & 1 tbsp toor daal, 1 1/2 cup raw sona masuri rice ,1/2 cup idli rice (optional)if not available then use raw rice,3 tbsp flatened poha(flattened rice),1/2 tbsp methi seeds(Fenugreek seeds),3/4 tsp pink salt or non iodized salt,1-2 cup of water ,2-3 cup of water for rice blending.        For potato masala or curry ingredients as follows.    2 cup cubed potatoes(Aloo),  1 tbsp of oil, 1/4 to 1/2  tsp mustard seeds , 1/2 tsp cumin seeds(jeera) ,1 tbsp Bengal gram(chana dal) optional,1 tbsp udid dal     (black gram) optional, 1 pinch hing(asafoetida), optional,1 tsp ginger (adrak)if not plain available then u can also use ginger paste, 3/4 to 1 cup onion thinly sliced (pyaaz patle kate huye),1 spring curry leaves(Kadipatta),2 green chillies(hari mirch chopped),1/4 tsp turmeric (haldi),1/2 to 3/4 tsp salt (namak),2 tbsp coriader leaves(kothimbir ke patte) chopped,Butter (ghee as needed). So many ingredients huge list 😅                                                            camera light action to take : 1)   we have two choices one is to make dosa in  wet grinder or making masala dosa batter .        2) Take a large bowl we will add  udid dal,chana dal and methi seeds in it.              3) Rinse them well few times with water.      4) Along side take a another bowl add rice in that bowl  and rinse Rinse them well 2-3 times with fresh water .                                      5) soak it for 4-5 hours (Bhigo ke rakho) .      6) before 30 minutes for making batter rinse poha 2- 3 times with water .                    7)soak the poha for 30 minutes(bhigo ke rakho).                                                                      8)drained out the water from dal completely and add for blending along with poha in a blender .                                      9)  pour 1 1/4 cup of water  and salt.if u are living in hot area then skip the salt.                10) add salt after fermentation of ingredients in case of hot area only.               11)Blend the batter we need thick ,frothy and smooth .                                                          12)now we will add blended batter to a bowl(the bowl which we soaked dal).            13)drained water from rice .                              14)then we will add this rice add 1/2 cup of water in blender we will blend the rice.         15)Try to blend coarse or smooth or the way u prefer .                                                          16)if water feel less in for blending then add again 1/4 cup of water in that blender.    17)pour this rice batter into the dal batter and mix it well properly.                                      18)divide the batter in 2 seprate bowls.          19)cover the bowl properly.lets proceed to fermentation. Dont overferment it will damage the taste.                                                20)Allow the masala dosa to ferment upto 6-16 hours in hot environment or  60 Celsius or 140 F for 10 min in oven if environment is cool.        
21)boil or steam the potatoes in pressure cooker.we don't need mushy potatoes.         22)after 3 whistles in cooker our potatoes Is done .                                                                   23)Along side soak 1 tbsp Chana dal and 1 tbsp udid dal in hot water.                                 24) hot water soften the skin of dal.               25) drained out the soaked dal after 30 minutes.keep them aside.                                 26)when pressure of cooker lowers then remove the potatoes.                                           27)Take a pan add a oil in that.                        28) now add cumin, mustard seeds,Chana dal and udid dal .                                                   29) we will saute until the dal become golden coloured.                                                   30)now add onions,Curry leaves and chilies in that pan .                                               31)Fry untill onion become golden in appearance.                                                           32)Add hing and ginger and when ginger aroma comes out untill they kept .                 33)now crumbled the boiled potatoes and add them in a pan.                                               34)now add turmeric and salt along with 2-3 tbsps of water .                                               35)saute untill 2-3 minutes.                              36)Add coriander leaves and add salt if feel less .                                                                          37)  bring the batter with consistency add water if it's not consistent .                                38)  batter must be thick it must spread uniformly.                                                               39) heat the dosa tawa on a medium heat.                                                                         40)  after pan become hot enough  sprinkle some water on a pan.                          41)  after done that stir the batter and then laddle out full on a pan.                            42) pour it into the center in a pan spread uniformly. Add  1/4 tsp of butter on edges it will soften.                                                               43) when edges become thick flip the dosa.and serve the way u like.

Note :I have not added red chutney for eating with dosa I guess it will become longer to read.but i will try to add in next south indian dishes .
