Vadapaav no doubt most liked street food after panipuri as per my foodie knowledge 😅. vadapaav basically mostly eaten in Mumbai,Pune and major area of maharashtra.it is composition of two content vada (made up of potato stuffing) and paav (which is bread ). Do u want to taste vadapaav at home then come with me.lets do it.                                                                             preparation time :20-25 minutes.                       Cook time  :35-40 minutes.                                    Total time :55 min-1 hour .                                Servings :6-7 servings.                                         Type :vegetarian preferred as : breakfast mostly.                                                                      Ingredients: green chutney- 1 1/2 cup coriander leaves(dhaniya/kothimbir) , 3/4 to 1 tsps of daliya or fried gram or dried coconut,1/2 tsp jeera (cumin seeds),2 hot green chillies ,2 small garlic cloves(lehsun), 1 tsp lemon juice ,water (as needed),salt( as needed),.     For dry garlic chatney we need 6-8 garlic cloves (lehsun),6-10  red chillies (as per needed we will use less spicy red chilies,1/2 to 1 cup dried coconut( khobra),1 tsp peanuts (shengadana ) (optional),salt (as needed),1/2 tsp red chilli powder (optional),.  For vadapaav stufffing next content will be needed 3 medium potatoes(aloo)crumbled potatoes will be better option,2-3 green chillies (as per need),3/4 inch ginger,2-3 cloves garlic( lehsun),1 tbsp of oil,1/4 to 1/2 tsp mustard,2 pinches of Hing (Asafoetida),1 spring curry leaves(kadipatta),1/8 tsp of turmeric (haldi),1/8 tsp of red chili powder(optional),.             Oil for deep frying for serving 6-7 paav needed, 7-8 green chilies.                                                                        List of ingredients is huge isn't it 😅.so let's move to light camera action for vadapaav.      Instructions to do: 1)first of all we have to prepare green chutney.                                         2)plucked coriander leaves rinse them well.   3)drain them well in colander .                        4)with the help of blender jaar we will make thick paste of all ingredients first of all add ingredients in it.                                                    5)Add 1 tsp of water in that the paste will become smooth.                                                     6)add salt,lemon juice and Green chilies as per your taste in it.                                                7)  chutney must not be runny it will become soggy so thats why we will stored in glass jar and refrigarate   Untill we need .         8)   then we have to make   dry garlic chutney.u are thinking na that why we are making so many chutney for vadapaav.it enhance the taste of vadapaav.                                                  9) remove the outer skin of garlic and dry roast them for 2-3 minutes.                                  10) Add red chilies roasted Untill they become crispy.                                                         11)  Transfer to a plate for cool down for some time.                                                               12) In a same pan add coconut after become it hot transfer coconut to plate to cool down.   13)  If u are using peanuts also dry  roasted them untill become they turn golden.              14) first of all we have to make powder of red chili by adding salt.                                        15) Then add garlic for blend once.                   16) Then add peanuts and coconut in a blender and make a coarse powder of them.    17)  set this coarse powder aside for sometime.                                                                18)  now we will move towards the making of  stuffing for vada.                                              19)  Boil the potatoes  they must be firm.u can boi potatoes in cooker or pot .                    20) after potatoes boiled crumbled them well.                                                                          21)  now we have to make coarse paste of green chili,garlic and ginger.                              22)  Heat 1 tbps of oil in a pan.                            23) after oil is crackled add mustard (mohari) seeds in it .                                              24)   next add curry leaves untill become crisp.                                                                         25) Add ginger garlic paste and  green chili paste in a pan.                                                         26)   fry on a low heat.                                          27)   Next add Hing, salt,turmeric powder and  red chili powder in it mix it well.              28) after mix well add potatoes and coriander leaves  turn off the gas/stove and mix it properly.                                                       29)   cool down this mixture and make the balls (6-7 balls or more) .                                      30)  move towards making Heat oil for deep frying.                                                                       31) Add besan And rice flour or cornflower in a bowl Mixing well.                                           32)Next add salt, hing ,turmeric and red chili powder (optional).mix it well .                  33) Add water in it as needed.                             34) it must not be too thick or too thin try to make good consistency.                                        35)  check salt and spice in it. After oil become hot add  tiny pinch of soda to batter mix well (optional) .                                               36)  regulate the flame of gas to medium.  Drop the balls in that oil.   Make sure that balls fried well .after fried properly drain the oil and serve the vadapaav with green chilli or peanut chutney.
