Coconut Rice Recipe

Ingredients:
1 cup basmati rice (or any long-grain rice)
1 cup coconut milk (canned or fresh)
1 cup water
1 tablespoon coconut oil or vegetable oil
½ teaspoon salt (adjust to taste)
Optional flavorings:
1–2 pandan leaves (knotted) or ½ teaspoon pandan extract
2–3 cardamom pods
1 cinnamon stick
2–3 cloves
1 tablespoon grated coconut (for garnish/toasting)

Instructions:
Rinse the rice: Wash the basmati rice under cold water until the water runs clear. Soak for 15–20 minutes, then drain.
Sauté (optional): Heat coconut oil in a pot over medium heat. Add whole spices (cardamom, cinnamon, cloves) and sauté for 30 seconds until fragrant. If using pandan leaves, add them now.
Cook the rice: Add the drained rice to the pot and stir for 1 minute. Pour in coconut milk, water, and salt. Stir gently.
Simmer: Bring to a boil, then reduce heat to low. Cover and simmer for 15–18 minutes, or until the liquid is absorbed and rice is tender.
Rest and fluff: Turn off the heat and let the rice sit, covered, for 5–10 minutes. Remove whole spices and pandan leaves. Fluff gently with a fork.
Garnish (optional): Toast grated coconut in a dry pan until golden and sprinkle over the rice before serving.

Tips:
For richer flavor, use full-fat coconut milk.
Adjust liquid ratio if using different rice types (e.g., jasmine or short-grain).
Pair with curries, grilled meats, or vegetables.
