🥚 Egg Lababdar Recipe

Egg Lababdar is a delicious North Indian curry where boiled eggs are simmered in a rich, creamy tomato-based gravy with aromatic spices. It's similar to Paneer Lababdar but uses eggs instead.

📝 Ingredients:

For the gravy:
2 large onions, roughly chopped
3-4 tomatoes, roughly chopped
10-12 cashew nuts (soaked in warm water for 15 minutes)
1-inch ginger, chopped
4-5 garlic cloves
2 green chilies (adjust to taste)
1 tbsp oil or ghee

Whole spices:
1 bay leaf
2-3 cloves
2-3 green cardamoms
1-inch cinnamon stick

Powdered spices:
1 tsp red chili powder (adjust to taste)
1 tsp turmeric powder
1 tsp coriander powder
1 tsp cumin powder
1 tsp garam masala
1 tsp kasuri methi (dried fenugreek leaves)
Salt to taste

Other ingredients:
6-8 boiled eggs, peeled and lightly slit
2 tbsp fresh cream
1 tbsp butter
1 tsp sugar (optional, balances acidity)
Fresh coriander leaves for garnish
Water as needed

👩‍🍳 Step-by-Step Instructions:

Step 1: Prepare the gravy base
Heat oil/ghee in a pan. Add whole spices and sauté for 30 seconds.
Add chopped onions and sauté until golden brown.
Add ginger, garlic, and green chilies. Sauté for 2 minutes.
Add tomatoes and soaked cashews. Cook until tomatoes are soft and mushy.
Let the mixture cool, then blend into a smooth paste.

Step 2: Cook the gravy
In the same pan, add butter.
Add the blended paste and cook for 5-7 minutes on medium heat.
Add all powdered spices (except garam masala and kasuri methi) and cook until oil separates from the gravy.

Step 3: Assemble the curry
Add 1-1.5 cups of water to adjust consistency.
Add salt and sugar. Bring to a gentle simmer.
Gently add boiled eggs. Cover and cook for 5-7 minutes on low heat.
Add garam masala, kasuri methi (crushed between palms), and fresh cream.
Mix gently and simmer for 2 more minutes.

Step 4: Final touches
Garnish with fresh coriander leaves and a drizzle of cream.
Serve hot with naan, roti, or jeera rice.

Egg preparation: Make 2-3 shallow slits on boiled eggs so they absorb the gravy better.
Creaminess: For extra richness, add 1 tbsp of ground melon seeds or poppy seeds while blending.
Variation: You can lightly fry the boiled eggs in oil before adding to the gravy for a different texture.
Dairy-free option: Replace cream with cashew paste or coconut milk.
