🍅 Classic Tomato Rice (Thakkali Sadam)

Ingredients:

For the rice:
1 cup basmati rice (or any long-grain rice)
2 cups water
½ teaspoon salt
1 teaspoon oil or ghee

For the tomato masala:
3-4 medium tomatoes, finely chopped
1 large onion, finely chopped
2-3 green chilies, slit lengthwise
1 tablespoon ginger-garlic paste
¼ cup fresh coriander leaves, chopped

Spices:
1 teaspoon mustard seeds
1 teaspoon cumin seeds
½ teaspoon turmeric powder
1 teaspoon red chili powder (adjust to taste)
1 teaspoon coriander powder
½ teaspoon garam masala
1 sprig curry leaves
2 tablespoons oil or ghee

Optional garnishes:
2 tablespoons roasted peanuts or cashews
1 tablespoon lemon juice
Fresh coriander for garnish

Step-by-Step Instructions:

Step 1: Cook the rice
Rinse 1 cup rice until water runs clear
In a pot, add rice, 2 cups water, ½ tsp salt, and 1 tsp oil
Cook until rice is 90% done (grains separate but firm)
Spread on a plate to cool and prevent sticking

Step 2: Prepare tomato masala
Heat oil/ghee in a large pan or kadai
Add mustard seeds - let them splutter
Add cumin seeds and curry leaves
Add chopped onions and sauté until golden brown
Add ginger-garlic paste and green chilies - sauté for 1 minute
Add all dry spices (turmeric, chili powder, coriander powder)
Immediately add chopped tomatoes
Cook on medium heat until tomatoes become soft and mushy (8-10 minutes)
Add salt to taste
Cook until oil separates from the masala

Step 3: Combine rice and masala
Add the cooked rice to the tomato masala
Gently mix without breaking rice grains
Sprinkle garam masala and chopped coriander
Cover and cook on low heat for 5 minutes (dum style)

Step 4: Garnish and serve
Turn off heat and let it rest for 5 minutes
Add lemon juice and mix gently
Garnish with roasted nuts and fresh coriander

Serve hot with raita (yogurt dip) or plain yogurt
Pair with papad or pickle
Goes well with potato chips or vegetable salad
