What is Dalcha?
Dalcha is a flavorful Hyderabadi lentil stew that combines meat (usually mutton or lamb) with vegetables (typically bottle gourd or pumpkin) and lentils. It's known for its rich, tangy flavor profile that comes from tamarind and a blend of aromatic spices.
Traditional Dalcha Recipe
Ingredients:
For Dal/Lentils:
½ cup chana dal (split chickpeas)
½ cup toor dal (split pigeon peas)
½ cup masoor dal (red lentils)
1 medium bottle gourd (lauki/doodhi), peeled and cubed
1 medium potato, peeled and cubed
1 medium carrot, peeled and cubed
1 medium tomato, chopped
1 medium onion, finely chopped
2-3 green chilies, slit
1 tbsp ginger-garlic paste
1 tsp turmeric powder
1 tbsp red chili powder
1 tsp coriander powder
½ cup thick tamarind pulp
Salt to taste
4 cups water
For Tempering (Tadka):
2 tbsp oil or ghee
1 tsp mustard seeds
1 tsp cumin seeds
2-3 dry red chilies
8-10 curry leaves
1 tsp asafoetida (hing)
For Garnish:
Fresh coriander leaves, chopped
Instructions:
Step 1: Prepare the Lentils
Wash all three dals (chana dal, toor dal, masoor dal) thoroughly and soak for 30 minutes
Pressure cook the soaked dals with turmeric powder and enough water for 3-4 whistles until soft
Mash the cooked dal lightly with a spoon or whisk
Step 2: Cook Vegetables
In a large pot, heat oil and add mustard seeds, cumin seeds, dry red chilies, curry leaves, and asafoetida
Add chopped onions and sauté until golden brown
Add ginger-garlic paste and sauté for 2 minutes
Add chopped tomatoes and cook until soft
Add all the chopped vegetables (bottle gourd, potato, carrot) and green chilies
Add red chili powder, coriander powder, and salt
Mix well and cook for 5 minutes
Step 3: Combine and Simmer
Add the cooked and mashed dal to the vegetables
Add tamarind pulp and adjust water consistency
Bring to a boil, then simmer for 15-20 minutes until vegetables are cooked through
Adjust seasoning if needed
Step 4: Final Tempering
In a small pan, heat 1 tbsp oil or ghee
Add mustard seeds, cumin seeds, dry red chilies, and curry leaves
Pour this tempering over the prepared dalcha
Step 5: Serve
Garnish with fresh coriander leaves
Serve hot with steamed rice, biryani, or roti

Lentil Combination: The traditional mix of three dals gives the perfect texture
Tamarind: Use good quality tamarind for the right tanginess
Vegetables: Bottle gourd is traditional, but pumpkin or squash work well too

Meat Variation: For non-vegetarian version, add 250g mutton/lamb pieces (cooked separately) along with vegetables
